I was also hideously hungover and was distinctly lacking of any kind of correct ingredients, which was not ideal. The best thing, however, about soda bread is that you don't have to wait for it to rise, because it doesn't have any yeast in it, which means it is one bloody quick loaf to make.
Ingredients (for half the normal size loaf):
250g wholemeal bread flour
75 ml natural yoghurt
75 ml milk
1 teaspoon salt
1 teaspoon baking powder
Method:
1) Preheat the oven to 200 degrees fan.
2) Combine all the ingredients and bring together into a fairly wet dough.
3) Knead for a bit on a lightly floured surface until well combined and shape into your desired loaf shape. I kind of rammed mine to work in a small rectangular loaf tin.
4) Shove in the oven for 20 minutes, and then turn the loaf upside down and bake for another 10-15 minutes, or until when you knock on the bottom of the loaf it sounds hollow.
5) Take out of the oven and leave to cool. Or if you're like me, grab three fat slices to have with your soup.
I sliced the rest of the loaf and froze it, which means delicious sandwiches for the rest of the week at work, yum yum.
