Ingredients (Makes 12)
- 2 cups of oats ground to a flour
- 3 smallish apples (I used royal gala variety)
- 1 tbsp baking powder
- 1 egg
- 1/4 cup honey
- 1/4 natural yoghurt
- 3/4 cup milk
- 1 tsp ground mixed spice
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
Method
1) Preheat oven to 180 and line a cupcake baking tray with pretty cases
2) Put two cups of oats into a food processor and blend to a flour
3) Peel, core and chop into inch squared ish pieces the apples
4) Mix all the ingredients together into a bowl (I told you it was easy) until combined
5) Spoon into the cupcake cases until about 2/3 full
6) Bake for twenty minutes (I normally turn the tray after ten minutes to ensure an even bake!)
7) Take out and devour. I served mine in a bowl with a generous dollop of natural Greek yoghurt. DELISH.
