- 190g Sainsbury's muesli [original recipe: 110g oat flour, 40g almond flour, 40g vanilla whey]
- 2 tbsp set honey [original recipe: 2 tbsp sweetener]
- 2 tsp baking powder
- 1/2 tsp of each of the following: cinnamon, ground ginger, mixed spice, ground nutmeg
- 1 tsp vanilla bean paste [not in original recipe]
- 1 whole egg, 2 egg whites
- half a medium carrot grated (about 75g) [original recipe: unsweetened apple sauce]
- 1/3 cup of milk [original recipe: almond milk]
Clearly I fucked about with the recipe quite a bit...
METHOD
1) Preheat oven to 175 degrees c
2) Blitz the muesli in a food processor until it is like a coarse flour
3) Whisk one egg white into stiff peaks
4) Basically, bung everything else in (not the whisked egg white) into a mixing bowl. Or the largest Tupperware you have, if you don't have a mixing bowl, like I don't.
5) Whisky whisk whisk
6) Fold in the whisked egg white
7) Transfer into cupcake cases and bake for 15 mins. Take out and leave to cool.
Really straightforward recipe. They smelt delish when they were baking and the spring back on the sponge promised light yet moist. I was eagerly anticipating trying them.
BUT.
They are just... too healthy. They didn't have much taste at all, no actual sweetness or flavour, they are just a TEXTURE. Which I was shocked about really because of all the spicing. I mean, they aren't horrible, but they aren't exactly making me do cartwheels around the living room either, put it that way. I think that if you're on a health kick, for 70 calories a pop, these bad boys might just nip your cakey cravings in the bud. If you want to make them taste nicer, just tell yourself about all the sugars and fats a regular muffin of the same size would have! Be GUILT FREE! Well guilt free means I currently have put 7 in the freezer and am thinking they might remain there until I forget just how... oaty... and healthy... and unchocolatey... they were.
VERDICT: on a diet? Make them. Unfortunately, a cake without unrefined sugars or fats is just an impostor.
