I got given a bag of brazil nuts by my darling mother which needed gobbling up because their expiry date was fast approaching. And I have a kilo of porridge oats. Ideally I wanted something which combined to two - and then I stumbled across this recipe for sticky nut bars by a fab little blog called Green Kitchen Stories. I didn't have all the ingredients so I mixed and match but here's roughly how it went.... Oh and sorry for the cup measurements. Their website did it in cups and I got these jazzy M&S cup measurer things, so I went with it.
Ingredients:
1 aggressively large tablespoon of peanut butter
1 tablespoon honey
1/2 cup porridge oats
1/2 cup raisins
1 cup chopped brazil nuts
10 dried apricots, chopped
2 table spoons water
Method:
1) Line a baking tin with parchment paper
2) Simmer the peanut butter, honey and water together in a small saucepan with the chopped apricots
3) Add in the oats, raisins and brazil nuts
4) Stir until well combined
5) Pour into the baking tin and put into the fridge to chill for 25-30 minutes.
6) Chop up into squares and voila!
Next time I think I should add more honey/peanut butter.... or maybe a smaller tin to compact the bars more because some of them were a bit crumbly... but seriously good eats!
